- Preheat your oven to 250 degrees C. Prior to cooking them, unwashed potatoes should be scrubbed clean, washed and dried with eyes and surface blemishes removed then cut in half.
- Place the potatoes into roasting pan and toss them with olive oil, salt, pepper, and rosemary until they are evenly coated. Spread out potatoes in a single layer.
- Bake in preheated oven for 30 minutes or more, stirring occasionally. Bake them until they are browned and crisp. Serve immediately.
